Manger du veau :oui ou non?

Dans sa rubrique cuisine ce matin dans le Guardian Magazine Hugh Fearnley-Whittingstall, chef célèbre,  prétend qu'il est plus moral de manger certains types de veau que de n'en pas manger du tout. Les Anglais sont relativement frileux à cet égard, considérant l'élevage du veau comme inhumain. Selon le Meat and Livestock Commission en 2006 1% seulement des Britanniques consommaient du veau. Vu qu'on abat 250 000 veaux à la naissance puisque il's ne servent à rien dans la production laitière, vaut-il mieux les élever d'une manière humaine pour les consommer?

Hugh F-W ne fait que nous rappeler ce qu'il avait dit en 2006, avec Janet Street-Porter, dans un article de l'Independent. Il a également fait campagne sur la question dans sa série télévisée.

En Angleterre il existe des producteurs de "veau rosée" (rosé veal or rose veal) qui élèvent du veau humainement, même en leur donnant dans certains cas un peu de place à l'extérieur pour errer. Les bêtes sont abattues à l'âge d'au moins six mois, c'est-à-dire plus âgé qu'un porc ou qu'un agneau typique. Les autres veaux sont abattus à la naissance ou vont à l'exportation en Europe (les Italiens et les Néerlandais aont amateurs du veau) où les conditions d'élevage sont soi-disant plus cruelles.

Est-ce que les jeunes bovins sont moins bien traités en France? Pas forcément. Selon la PMAF (Protection modiale des animaux de la ferme) des progrès ont été faits grâce à la réglementation européenne, mais que les conditions varient trop, par exemple en ce qui concerne la literie dans les cases.

Selon eux, "les veaux sont enlevés à leur mère un ou deux jours après la naissance, puis sont isolés. Cette technique permet de commercialiser tout le lait que produit la vache. La séparation du veau de sa mère impose un stress important à la fois pour la vache qui peut meugler pour appeler son veau pendant les deux jours qui suivent leur séparation et pour le veau lui-même. Dans la nature, le sevrage est une opération progressive et le veau peut téter jusqu’à l’âge de 8 mois."

Dans certains cas les veaux sont élevés biologiquement et peuvent même rester auprès de leur mère. Leur conseil: "...donnez votre préférence à la viande de veau biologique. Ne recherchez pas la viande de veau blanche; la viande de veau rosée, presque rouge, provient d'un animal en meilleure santé."

Ma conclusion? Il vaut mieux manger un veau bien élevé que de supporter qu'il soit abattu à la naissance.

A zero preparation fluency game

Google Translate beaters

Google Translate is a really useful tool, but some teachers say that they have stopped setting written work to be done at home because students are cheating by using it. On a number of occasions I have seen teachers asking what tasks can be set which make the use of Google Translate hard or impossible. Having given this some thought I have come up with one possible Google Translate-beating task type. It's a two way gapped translation exercise where students have to complete gaps in two parallel texts, one in French, one in English. There are no complete sentences which can be copied and pasted into Google.

Preparing for GCSE speaking: building a repertoire

As your Y11 classes start their final year of GCSE, one potential danger of moving from Controlled Assessment to terminal assessment of speaking is to believe that in this new regime there will be little place for the rote learning or memorisation of language. While it is true that the amount of learning by heart is likely to go down and that greater use of unrehearsed (spontaneous) should be encouraged, there are undoubtedly some good techniques to help your pupils perform well on the day.

I clearly recall, when I marked speaking tests for AQA 15-20 years ago, that schools whose candidates performed the best were often those who had prepared their students with ready-made short paragraphs of language. Candidates who didn't sound particularly like "natural linguists" (e.g. displaying poor accents) nevertheless got high marks. As far as an examiner is concerned is doesn't matter if every single candidate says that last weekend they went to the cinema, saw a James Bond…

Worried about the new GCSEs?

Twitter and MFL Facebook groups are replete with posts expressing concerns about the new GCSEs and, in particular, the difficulty of the exam, grades and tiers. I can only comment from a distance since I am no longer in the classroom, but I have been through a number of sea changes in assessment over the years so may have something useful to say.

Firstly, as far as general difficulty of papers is concerned, I think it’s fair to say that the new assessment is harder (not necessarily in terms of grades though). This is particularly evident in the writing tasks and speaking test. Although it will still be possible to work in some memorised material in these parts of the exam, there is no doubt that weaker candidates will have more problems coping with the greater requirement for unrehearsed language. Past experience working with average to very able students tells me some, even those with reasonable attainment, will flounder on the written questions in the heat of the moment. Others will…
